Quick easy & it is so yummy!
1/4 cup olive oil
12 slices French bread
Mozzarella shredded cheese
Fire Roasted Diced Tomatoes
large basil leaves chopped
(I also like to add sliced avocado)
Then I dip mine in balsamic vinegar :)

Total Time: 15 Min
Brush oil on 1 side of each bread slice.
Arrange 6 slices bread, oil side down in a pan on med heat, and place handful of shredded cheese, 1/4 cup tomatoes and some basil leaves (add avocado here as well). Sprinkle Italian seasoning on top & then place oiled side up, on top each bread slice. Place sandwiches in fry pan or panini maker over medium heat until golden brown and cheese just melts; repeat for remaining sandwiches.
